Ingredientes

- 1 kg de pulpitos
- 3 tomates maduros
- 1 cebolla
- 4 dientes de ajo
- 1 naranja
- 6 pimientos Piquillo
- 1 manojo de perejil
- 1 rama de apio
- 1 copa de vino blanco
- 1 yema de huevo
- aceite de oliva
- sal y pimienta blanca

Manos a la obra

1- Pelar, lavar y picar la cebolla junto con 2 dientes de ajo y 5 pimientos del Piquillo. Lavar los pulpitos, trocearlos y ponerlos en una cazuela.

2- Pelar los tomates, cortarlos en trozos y repartirlos sobre los pulpitos. Echar la picada del paso anterior, salpimentar y llevar a ebullición. Bañar con el vino y cocer 25 min.

3- Con la batidora, triturar el ajo restante y, sin dejar de batir, incorporar la yema de huevo y un vaso de aceite. Sazonar, añadir a la cazuela y cocer 10 min.

4- Cortar la piel de la naranja en tiritas. Lavar, picar fino el apio y añadir la mitad a la cazuela de los pulpitos, mezclar con el jugo y cocer 5 min más. Antes de serivr, decorar con la naranja, el apio restante, perejil picado y un pimiento.
